sharpening expensive kitchen knives

I regularly read online "where do I send my expensive kitchen knives to be sharpened?" Its seems alot of people have had really bad experiences in the past when bringing their expensive cutlery to the local knife sharpening service and receiving back a botched sharpening job that has ruined their favorite knife. Expensive European and Japanese kitchen knives typically are made with a high quality steel and have unique handles to an extent. Many have specialized cutting purposes with acute knife edge angles ground with those specific cutting tasks in mind. 
     So what happens when you bring a high end knife that was sharpened by hand to your run of the mill knife sharpening service? Well more than likely, after you hand your knife over to the sharpener, they will look at it and say it's nice looking. Next, just like any other blade they get handed, will bring it over to their knife grinding machine and put a "that looks good" edge on it. That kind of knife edge is ok for basic or "ok" knives but you will not be satisfied with that. The owner will bitch , moan and complain but that run of the mill knife sharpening service will not fix the issue because they will not know how to sharpen an expensive knife properly anyway. You will be left with a knife that costs a hundred/hundreds/thousands and try to sharpen it yourself. Stop,  honestly, more likely than not, you will do more damage then the last sharpening service. There is only so much i can do with out making it by hand myself. 
I can and will carefully take your expensive knives and treat them as if they were my own. Whether its a folding knife,pocket knife, tactical knife, military knife, combat knife, self-defense knife, hunting knife, fixed blade, kitchen knife, Japanese knife, or hand made custom will be treated with the same care and respect that the knife maker made it with.
   So if you have a shun knife, cutco knife, miyabi knife, or high end knife like wustof true damascus, Haiku
 Itamae, Shun reserve,  Miyabi birchwood,Honyaki, Yaxell Ran or other expensive kitchen knife please rest assured that each one that you send to me will be sharpened properly by hand to a hair whittling end that other knife sharpening services can not match. On all custom knife sharpening and high-end kitchen knives with a value exceeding $500 I ask that customers contact me before hand. These custom and expensive knives are sharpened by hand and are charged by individually quoted price, Usually 10% of the knife value.
