Expensive Kitchen Knife Set

Knives are just like any other product that you might buy. While there are cheap, mid ranged and high-end knife sets that you could buy, this kitchen knife review will detail in short some of the more popular/well known knife brands. Now this doesn't mean that you couldn't find a quality knife set for under $300, but this kithen knife list was made up with three criteria in mind.
First off, the kithen knife set must retail for $1000 or more. Some may flinch at a knife set priced so high but like high end luxury cars, you get what you pay for. High-end kitchen cutlery typically has several reasons why the price sky rockets. Manufacturers have spent a considerable amount of time and research into making these fine cutlery knife sets. Beautiful designs and cutting edge knife materials are combined to produce art. All these features and the added fact of a labor intensive manufacturing process produces an awesome product.
Secondly, the knife set must be made with a premium blade steel. What use is it to buy an expensive knife if it won't hold a razor edge? I try to reinforce this principle to my knife sharpening service customers. Having a quality knife steel for you blade means that the knife will stay sharper longer and will need to be sharpened by my sharpening service less often (Maloon's Knife Sharpening Services - EliteEdges.com). Common knife steels used by high-end kitchen knife sets include white and blue steel, VG-10, SG2, and ZDP 189. This review will focus just on the last three.
-Quick knife steel information
VG-10-   Stands for V-Gold-10 and is manufactured in Japan. It has been made popular in the knife world by companies like Fallkniven and Spyderco. It is a stainless steal with a high carbon content with excellent edge retention and stain resistance.
SG2-  Super gold or SGPS is a newer powdered steel coming out of Japan. It is regarded by many to be the finest kitchen knife steel availabe today. This powdered steel is able to take a high rockwell hardness  and is more refined then VG10. It offers less edge chipping and superior edge retention.
ZDP-189 - A stainless steel made by Hitachi metals in Japan. Used by many knife makers like Benchmade knives. This exotic metal is able to get super sharp and retain its edge very well.
Lastly, these expensive kithen knife sets must be made by a large/ well known knife maker. Althought there are many high quality/high end kitchen knife makers in the world, this kitchen knife review will focus on knife manufacturers that are well known in the U.S. (not always meaning made in the United States of America).  Large companies offer the benifit of warranties and numerous knife reviews by customers. A few even offer a Mail-in Knife Sharpening Service if you don't mind waiting 2-3 weeks for your  knives to by mailed back to you.
So the list will start in no real order. Any of these would be an excellent choice for a Kitchen Knife Set. It would also make a great present to give in my opinion.

Miyabi Birchwood 7 piece knife set.
This kitchen knife set retails for about $1,200 at most stores. Beautiful wood handled knives With SG2 steel blades.

Shun Fuji 7 piece knife set. These artful knives are next inline after Shun Reserve. Made with a 161 layer damascus clad blade with a SG2 steel core. These handmade kitchen knives retail in stores for $1,600

More knives will be updated soon. Expensive kitchen knives are worth the price if you have to cash.
